The Salsa Verde recipe from the Ball Complete Book of Home Preserving is a winner, as long as I use my friend JL's tweaks. (They're serious tweaks, but the structure of the recipe remains.) [UPDATE: See this post for the tweaked recipe.]
In fact, I love this recipe so much that I might forget about tomato jam and put all the rest of the 58 pounds of green tomatoes into some version of this Salsa Verde recipe.
This is a serious hurdle for me. Salsa needs to be complex. I want to be able to pour it into a bowl for chips, and I want to cook with it. I can do both with this.
E goes to school tomorrow. I have a short errand to run in the morning, and then I'm going to settle into some serious chopping.
These green tomatoes need to get in jars because I have 20-something pounds of apples that need to turn into sauce and the sauerkraut crock is coming this week! Ack!
Is this crazy? Or is this about me being determined to turn garden liabilities into assets? Isn't there value in this weird work? Can I bring attention to something that might not have "fruited" in a way traditionally desired? I want these tomatoes to feel loved.
Am I losing it? Or is this what is required when one has a garden that does this?
