What would you do with twenty pounds of apricots? Do you have any great recipes?
I still have some to use up, but I made apricot frozen yogurt, 11 half-pints of jam, and some fruit leather that's still cooking/drying.
I ordered a bunch of fruit from Azure Standard this week, and every bit of what I ordered was put on the truck this time around. It's hard to turn down perfect, organic fruit for $1/per pound so I got a little carried away (and assumed that I wouldn't get half of what I ordered).
I was sad but grateful to discover the nectarines aren't ripe yet so a shared canning project will be delayed until later this week. That meant I could focus on the fruit that truly was ripe -- the cucumbers (yesterday and bread and butter pickles today!) and the apricots.
And the kid is sick.
And my feet hurt again.
If I'm not mistaken, next up, the box of peaches will ripen, and then the nectarines... That mountain of compost has been calling to me all day, too.
Gathered elderberries today in the middle of it all and felt glad that the bushes are finally big enough so that I can share the berries with the birds.
oh my gosh but you work hard....and here I was proud of my two jars of refrigerator pickles....LOL!
