There's a lot to do out in the garden, but I am in the kitchen today -- finding creative uses for the monster zucchini that grew while we were on our trip.
So far, I've made two loaves of whole-wheat zucchini/carrot/apple bread. They just came out of the oven and smell delicious. I'm making a zucchini casserole/crustless quiche, too, and if this turns out, I'll make another with peppers, tomatoes and corn.
When D came up and heard what I was doing, he wasn't overly excited about the idea of zucchini casserole. I understand, but it's important to me that we use what the garden gives us. We've done pretty good so far this year. I'm proud of us. Hopefully, the sweet zucchini bread will make him happy.
Alas, I can relate to D about the zucchini casserole... zucchini is so not my favorite vegetable. But, like you, I hate the waste! So I ended up freezing most of mine, to buy me some time to figure out how to hide it creatively. :-)

Cynthia, you sometimes post photos of the zucchini ribbons you make. Those would just not fly over here, but I always wish I could come over to your house for dinner.
Stephanie, I developed a thirst (best word to use because it quenched something for me) for zucchini when I was pregnant.
I keep trying to hide it in things. Enchiladas is the winning recipe here. They'll eat it happily in that.
I'm grateful to have discovered that eating steamed zucchini with cheese for breakfast gives me a ton of sustained energy for hard physical work.
In any case, the quiche turned out fine so I'll make a couple more tomorrow with Mexican-ish ingredients.

Seed large zukes and slice them very thing (1/2" or less) soak for about 20 minutes in tamari and herbs, maybe some pepper. Fling those puppies in the dehydrator until they are super crisp. I have yet to discover a kid who won't eat zucchini this way.
The best thing to do with extra zucchini.
